The flavor is characterized by powerful tannins with a lingering intensity. It is clearly less sweet but not overly bitter. Recommended for making ganache chocolates, ganache patisserie, mousses, sauces, ice cream & sorbets, chocolate beverages, glazes and cremeux. But could be used to make decorations.
